Question Collecting Sensitive Items

Do any of you keep checks, bank statements, doctors records, or other sensitive items in your archival collections? How do you determine what you are/are not going to keep? If you do keep these types of items within a collection, do you restrict access for a limited number of years after the date of the item or passing of the original owner (similar to the 70 year rule for census records)? HELP!!!
