Default Best practices of video storing video?

I am located in NYC and working for a museum. We have some objects that have movement (think something along the lines of a flipbook) that we need recorded. I was wondering what are the best practices for video work are. I have looked around at a lot of archival best practices but they seem geared towards imagery, not video. I have a Canon XL 2 dv cam that I will be using to shoot.

I have a couple of questions:

If TIFF (lets ignore Jpeg2000) is the defacto standard for archival purposes, what is the standard for video? Should I leave the dv tapes untouched (as a backup) or is it acceptable to record over them? Are there any published papers that deal with this matter?
